Tiny Vacation Apartment Cooking: You Can Do It

We have just come back from spending 4 weeks in Kauai, living in three "kitchenettes" with basic equipment, tiny working surfaces, and breathtaking prices for staples at the local grocery store.  It is still possible to cook many yummy things without an oven, only two stovetop burners, and a chessboard-sized kitchen counter.  It just takes... pluck.  Pluck and a plan.  My photo shows what I found actually works for whatever you find at a local farmer's market, plus those cheaper produce and meat/seafood items you dig up at the local "cute" supermarket that charges....$39.99 a pound for Ono Hawaiian Fish.  Still, we ate restaurant quality meals at local folk's prices and loved it.  Take a note if you too engage with VRBO, Air BNB, a timeshare or such this summer and don't want to eat yet another burger and fries that costs $17.95 plus taxes.  Ouch.
