Moroccan Style Pork Tenderloin: Yummy Piggy

Sometimes one gets in a rut.  Chicken, beef, chicken, beef.  Seafood just for a change.  Pork is a wonderful alternative, especially a lovely trimmed tenderloin that roasts lean and tender without needing the brining or braising steps to achieve it.  Coming out of the blue to me one day, this recipe is a straightforward and very yummy way to eat pig.
