Kovid Kookies: An Essential Roadtrip Food

For some reason you have now forgotten you and your beloved family have decided to drive 500 miles in one day across Wyoming.  Or someplace.  When the road gets blurry, the sky gets rainy, or your family gets whiny, feed them these cookies.  Called Kovid Kookies because I cooked them to soothe us during our 5 days' isolation then masking, these Peanut-Butter-Chocolate-Chip-Gluten-Free wonders will last for up to a week in an airtight container and are practically pharmaceutical in their mood-lifting capability.
